Toasties with Egg Salad

Ingredients

1 1-pound French or Italian loaf, about 4- to 4 1/2 inches wide, sliced 3/4-inch thick

Extra-virgin olive oil

6 extra-large hard-cooked eggs, peeled and chopped

1/4 cup chopped Italian parsley

1/4 cup chopped chives

2 tablespoons minced shallot

2 tablespoons capers, drained and coarsely chopped

2 tablespoons fresh lemon juice

1 tablespoon Dijon-style mustard

2 tablespoons extra-virgin olive oil

1/2 teaspoon sea salt

Freshly ground black pepper


Directions
  1. Preheat oven to 400 degrees F. Brush one side of each bread slice with olive oil. Arrange on a large baking sheet. Bake for 8 to 10 minutes or until toasted. (Or, grill slices on the rack of a covered grill directly over medium heat for 1 to 2 minutes per side.)
  2. In a large bowl stir together the eggs, shallot, capers, parsley, chives, lemon juice, mustard, 2 tablespoons olive oil, salt, and pepper to taste. Serve on top of toasted bread slices and garnish with additional shallot and parsley.
