Shaved Brussels Sprouts Salad

Ingredients

1 1/2 pounds fresh Brussels sprouts, with stems intact and wilted leaves discarded

1 cup walnuts, lightly toasted

1/2 cup olive oil

1/3 cup fresh lemon juice

1/4 teaspoon freshly ground black pepper

2 ounces shaved Pecorino Romano cheese


Directions
  1. Holding each Brussels sprout at the stem end, cut into very thin slices using a mandoline slicer. Toss in a bowl to separate layers.
  2. Lightly crush the toasted walnuts with your hands and add to Brussels sprouts. In a small bowl whisk together oil, lemon juice, and 1/4 tsp. black pepper. Drizzle over Brussels sprouts mixture and toss to coat. Serve topped with the shaved cheese.
