Crab-Fennel Salad

Ingredients

1/3 cup plain low-fat yogurt

2 tablespoons mayonnaise or salad dressing

2 tablespoons milk

1/2 teaspoon curry powder

2 cups coarsely chopped fresh fruit, such as cantaloupe, strawberries, honeydew melon, and/or pineapple

1 6 ounce package chunk-style imitation crabmeat or lobster

3/4 cup sliced fennel

4 cups torn mixed salad greens


Directions
  1. For dressing, in a small bowl stir together yogurt, mayonnaise, milk, and curry powder. If desired, thin dressing with additional milk.
  2. In a large bowl combine fresh fruit, crabmeat, and fennel; set aside. Divide salad greens or lettuce slices among three salad plates. Top with crabmeat mixture; drizzle with dressing.
