1 large sweet onion, halved and thinly sliced (about 2 cups)
1 tablespoon olive oil
1/3 cup barbecue sauce
1 tablespoon bourbon or whiskey
12 ounces lean ground beef
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon black pepper
4 very thin slices cheddar cheese (1.75 oz. total)
4 reduced-calorie wheat hamburger buns, split and toasted*
4 small leaves Boston or bibb lettuce
4 slices fresh tomato
- In a large skillet cook onion, covered, in hot oil over medium-low heat 13 to 15 minutes or until tender, stirring occasionally. Uncover; cook and stir over medium-high heat 3 to 5 minutes more or until golden. Transfer all but 2 tablespoons of the onion to a bowl; cover.
- For bourbon sauce, add barbecue sauce to onion in skillet. Cook and stir until just boiling; reduce heat. Simmer, uncovered, 1 to 2 minutes or until slightly thickened, stirring occasionally. Stir in bourbon. Cook 1 minute more.
- Meanwhile, in a bowl combine the next four ingredients (through pepper); shape into four 1/2-inch-thick patties.
- Grill burgers, covered, over medium heat 8 to 10 minutes or until done (160 degrees F), turning once and topping each burger with a slice of cheese the last 1 minute of grilling. Serve burgers on buns with reserved caramelized onions, lettuce leaves, tomato slices, and bourbon sauce.
From the Test Kitchen
For restaurant-style buns, preheat the broiler. Place bun bottoms, cut sides up, and bun bottoms, cut sides down, on a large baking sheet. Brush bun tops only with 1 egg white, lightly beaten; sprinkle with 1 teaspoon sesame seeds. Broil 6 to 8 inches from heat 1 to 2 minutes or until bun tops are lightly browned.
