1 1/3 pounds 80% lean ground beef
1/2 kosher salt
1/4 ground black pepper
1/4 teaspoon chili powder (optional)
1/4 cup olive oil
4 slices cheese, such as American, cheddar, Swiss, or provolone (optional)
1 tablespoon melted butter or olive oil
4 kaiser rolls, onion buns, or hamburger buns, split and toasted
Lettuce leaves (optional)
Thin tomato slices (optional)
Thin red onion slices (optional)
Ketchup and mustard (optional)
Dill pickle slices(optional)
- On a tray or platter, pull apart and spread out ground beef into an even layer. Sprinkle evenly with 1/2 teaspoon salt, 1/4 teaspoon pepper, and if desired, the chili powder.
- Gently shape meat mixture into 4 patties: Do not knead meat! Instead, divide into 4 even balls and gently press down on each to form 3/4-inch-thick patties. Use fingers to form a slight depression in center of each patty. Cover with plastic wrap and chill for 30 minutes. Just prior to grilling, lightly brush both sides of patties with olive oil and season with additional salt and pepper.
- For a charcoal or gas grill, use a metal spatula to transfer patties on the rack of an uncovered grill directly over medium heat. Cover and grill for 10 to 12 minutes or until done (160 degrees F), turning once halfway through grilling. If desired, add cheese slices to patties during the last minute of grilling. Meanwhile, lightly brush butter on cut sides of rolls and grill directly over medium heat until just lightly toasted, 15 to 30 seconds.
- To serve, place patties on toasted roll bottoms. If desired, top patties with lettuce, tomato slices, onion slices, ketchup, mustard, and pickle slices. Top hamburgers with roll tops.
