Beet Salad with Salmon

Ingredients

1 1/2 cups mixed baby salad greens

1/2 cup green beans, cut, cooked, and cooled

3 1/2 ounces refrigerated baby beets, cooked and quartered

2 ounces salmon fillet, cooked

2 tablespoons Greek vinaigrette salad dressing

1 tablespoon goat cheese, crumbled (optional)

2 teaspoons pecans, chopped


Directions
  1. Arrange 1 1/2 cups mixed baby salad greens on a plate. Top with 1/2 cup cut green beans, cooked and cooled; 3.5 oz. refrigerated cooked baby beets, quartered; 2 oz. cooked salmon fillet. Drizzle with 2 Tbsp. Greek vinaigrette salad dressing and sprinkle with 1 Tbsp. crumbled goat cheese (optional) and 2 tsp. chopped pecans.
