Bacon Cheddar Pear Salad

Ingredients

1/3 cup white balsamic vinegar

1/3 cup extra-virgin olive oil

3 tablespoons pear nectar

1 large shallot, minced (3 tablespoons)

1/2 teaspoon kosher salt

1/4 teaspoon cracked black pepper

2 5 ounce packages mixed spring greens

10 slices bacon, crisp-cooked, drained and crumbled

2 Bartlett or anjou pears, cored and thinly sliced (2 cups)

4 ounces white cheddar cheese, shredded (1 cup)


Directions
  1. In a small bowl whisk together the vinegar, oil, pear nectar, shallot, salt, and pepper; set aside. In a very large bowl combine the greens, bacon, pears, and cheese. Add dressing and toss gently to combine
